*Chocolate Peanut Butter Cookies
Do not turn the oven on yet.
Mix together: 1/2 cup room temperature butter, 3/4 cup peanut butter
Add: 1/2 teaspoon vanilla, 2 cups confectionary sugar
Mix all the above ingredients really good, then scoop onto wax paper.
Fold the wax paper lengthwise over the top then begin rolling it back and forth until it becomes the shape of a log.
Place peanut butter log in freezer for 1 hour
Remove from freezer 1 hour or more later then slice and cut the log into small 1/2 inch pieces
Preheat oven to 350 degrees
Melt 1 stick butter (1/2 cup) in a microwave safe bowl for 20-30 seconds, then add:
1 (3.4 ounce) package instant chocolate pudding
Mix the butter and pudding really good, then add:
1/8 cup brown sugar
1/4 cup granulated sugar
Mix all the above really good, then add:
1 egg
1/2 teaspoon baking soda
1 teaspoon vanilla
Mix all the above really good, then add:
1 cup Flour
Mix all the above really good one more time.
If you don’t have a cookie scooper gadget then use a teaspoon.
Drop dough 2 inch apart onto greased cookie sheet (or use parchment paper).
Press 3-4 pieces of peanut butter mixture down on top of each cookie.
Bake 350 degrees for 10-12 minutes
Let cool for 10 minutes before eating or transferring to a container.
